Naan, Greek Yogurt & Crispy Lentil Bites

Hi, Mitten Crate fans! I’m Lori – a recipe developer, food photographer, and author of the food blog Foxes Love Lemons. I live in Ferndale, and went to culinary school at Schoolcraft College. Shortly after I graduated, I started blogging to share simple yet special recipes for the “home chef” in all of us.

Seriously, how good were those Atto & Sons Roasted Lentils from the May edition of Mitten Crate? I’m already a lover of lentils, but when you make them crunchy and spicy, I’m even more into them. I’ve been shaking these things over Greek yogurt, cottage cheese, and just eating them by the handful. I also whipped up this quick appetizer featuring them! No need to measure any of the ingredients – make as many or as few as you want!

Please enjoy, and be sure to check out my blog, as well as follow me on Facebook, Twitter and Instagram for new recipes!
